HashBrown Casserole

Once again, I can never keep things in a safe place. And supposing I do find a "safe place," I can never remember where that safe place is exactly. That is the beauty of the computer, and the internet in particular. Can't find something? Google it!

Well, unfortunately, family recipes are often misplaced... and a defining characteristic of such recipes, they are "secret." Therefore, you can't just "Google" a solution when you are craving some Chicken and Wild Rice or Grandaddy Nick's BBQ Sauce.

My answer to this problem... the Blog. Post the recipes here and you can always find them when you need them.

Tonights Recipe of Choice: HashBrown Casserole

2lbs. Frozen Hash browns (1 large bag - partially thawed)
1/4 cup melted butter/margarine
1 tsp. Salt
1 tsp. Pepper
1 can Cream of Chicken Soup
12 oz. Sour Cream
1 and 1/2 cups Shredded Extra Sharp Cheddar Cheese
1/2 cup Chopped Onions (optional)
Topping:
1 cup crushed corn flakes
1/4 cup melted butter/margarine

Mix all the ingredients together (minus the "topping"). Put in a 9X13 casserole dish. Mix melted margarine with corn flakes and sprinkle on top. Bake at 350 degrees for 1 hour.
MMMMMMMMMMM!

In case you were wondering, this posting was inspired by the fact that I cannot find my copy of the Apple Sauce Cake recipe. I would have to loved to have posted that one, but...
